Cold and easy "pizza's"

I should be working but just had to post about some yummy pizzas we had. I purchased some mediocre flat bread from superstore and pulled together two pizzas. The first was a cold veggie pizza. Chopped up raw veggies with the help of Iron chef Marsh who is not even in preschool yet but extremely talented with a knife. Blended cream cheese (both light and then some roasted garlic cream cheese from pane fromaggio) with some ranch seasoning and then spread on flatbread. Throw on chopped veggies. Make face with red pepper and mushrooms to amuse Sous Chef Marsh. Make second pizza carrots and peppers only to please picky gorilla. SEcond pizza was peanut butter with tamari soy sauce, hot sauce and some water blended up. Spread that on and then spread mushrooms, onions and grilled and chopped up "chicken" (soy protein patty). Add wee bit of old cheddar cheese. Heat in oven. Delicious. Add ice tea, interesting vignettes and events that make you giggle and good conversation with adults and you have an enjoyable sunday lunch on a hot day. Easy Peasy.

The mini chef seemed to appreciate having a purpose to chopping the veggies other than salad. A very yummy lunch indeed.
