We celebrated Easter with friends who feel like family up at the Fireside Lodge in Whistler. It was a members only weekend and the lodge is filled with people we have come to know and enjoy very much. Dinner as a potluck affair, with everyone chipping in to make a Greek/Leg of Lamb dinner. We cooked 3 legs of lamb, there was a fantastic chicken dish and tonnes of fantastic sides. I made greek potatoes. This recipe comes from a Moosewood cookbook that I used to have. These potatoes come out similar to the greek potatoes you get in a restaurant (only better). They cook in the oil, lemon juice and water for 1.5 hours and are incredibly good.
6 md Potatoes, cubed
3 c Hot water
2 ea Garlic cloves, pressed
1 1/2 ts Dried oregano
1/2 ts Black pepper
2 ts Salt
1 tb Olive oil
1/3 c Vegetable oil
1/2 c Fresh lemon juice
Chopped fresh parsley
Greek Potatoes Instructions:
Toss potatoes with lemon juice, oils, spices & garlic in a deep flat pan.
Add water.
Bake uncovered for 1 1/2 hours at 475F.
Stir every 20 minutes.
Add more water if necessary.
Allow the potatoes to evaporate the water during the last 20 minutes till only the oil is left.
Garnish with parsley & serve.
One of the most touching parts of dinner was when Danielle and Chris made a toast to the lodge. Danielle and Chris travelled here from Australia to work for a year as part of their travel around the world experience. They are in their 20's, adventurous and are here for the boarding and live and work at the lodge. They are great fun and we enjoy spending time with them. As I posted below they were MIA, lost in the back country for 3 nights. Frostbitten, traumatized but grateful to be alive, they spoke last night about how much this lodge has become their family. We toasted over a glass of champagne as they told us that when you are in a situation like that you just want to return to your family and what they thought of was how they just wanted to see Fireside Lodge again. It was emotional and we all wiped away tears as we are so grateful they are alive. It was a toast to life.
Later we sat around while DH and a few others took turns on the guitar. DH started a blues rif and before we knew he was thumping out "Aussie stuck in the backcountry blues" and it was hilarious!! I wish I had caught it on tape to post here or even remember what he was singing but no such luck. We sat up for several hours with about 8 others enjoying the music, company and a feeling of being very comfortable.
This morning our kids were joined by a few other kids for an easter egg hunt. Later today we are heading off (in tonnes of fresh snow!!) to church. We are also going to die some eggs today as there wasn't time on saturday as we ski'd all day. DH and I agreed, we are very blessed and so grateful to our Savior for the life that has fallen into place for us. Yeah, it was very emotional when I saw them sitting on the couch, red, sore but alive. The first few days they were still in shock but I think today it is hitting them a bit how close they were to not making it. Would have been a very somber easter for sure had it not worked out.
